Lisbon, May 31, 2023 - Starting tomorrow, June 1st, and until the end of summer, Wine & Books Lisboa offers special evenings with different DJ sets on the terrace of this five-star hotel unit, promising to transform the sunsets in the capital into unique moments.
Open to the public, the terrace of Wine & Books Lisboa is the ideal space to contemplate the city, enjoy the last rays of sun, and savor a light meal or a late afternoon drink in a pleasant environment that evokes nature. An excellent option to gather a group of friends and enjoy a delicious cocktail. Among the multiple options on the cocktail menu, trendy drinks of the moment like Aperol and the iconic red bitter Campari stand out.
Now, there is an extra reason to visit this luxurious boutique hotel - every Thursday, Friday, and Saturday, between 6:00 pm and 11:00 pm. Over four months, from June to September, various DJs will liven up the hot summer evenings at Wine & Books Lisboa, combining different musical styles and exploring current hits.
In partnership with Lab Music Events and ProDJ School - one of the largest and oldest electronic music schools in the country, the new venture of the hotel unit of the PBH Group aims to support young national talent and provide an excellent experience, in an exclusive location.
Visiting Wine & Books Lisboa is also an excellent opportunity to experience the Tasca da Memória restaurant, renowned for the refinement and quality of the suggestions by Michelin-star chef Vittorio Colleoni. In charge of the restaurant's executive direction, Colleoni coordinates a team of young chefs who combine traditional gastronomy and fine dining in each dish. With the aim of preserving the gastronomic authenticity of traditional taverns and sharing dishes, the Tasca da Memória menu promotes some of the ingredients and dishes representative of Portuguese cuisine.

Chef Vittorio Colleoni focuses on highlighting ingredients such as cod and octopus and innovates desserts with the original Portamisú
Lisbon, 30 March 2023 – Tasca da Memória, located within the elegant and intimate Wine & Books Lisbon Hotel in the historic area between Belém and Ajuda, has launched its new spring-summer menu, created by Vittorio Colleoni.
The Chef – who holds a Michelin star earned at the “San Martino” restaurant in Italy – aims to reinvent the concept of a ‘tasca’ within a five-star hotel, elevating Tasca da Memória to a fine dining experience. With a complete overhaul of the previous menu, Vittorio has designed a new, more exclusive and creative menu that perfectly adapts the best local ingredients.
“I describe my cooking style as very flexible, but I believe respect for the ingredients is fundamental to creating a fine dining experience. During preparation, I value the integrity of the food and strive to extract maximum flavour and expression. I do not consider myself an ‘Italian-style’ chef – my culinary conception comes from my experiences in Italy, Spain, and the United States, but I maintain an unwavering commitment to authenticity in cooking and excellence in the final result,” says Vittorio.
“As soon as I embraced this project with the PBH Group, I dedicated myself intensely to studying traditional Portuguese gastronomy, explored the typical rituals of tascas, and created my own interpretation with the goal of developing a ‘tasca’ style within a five-star hotel. I realized it would be necessary to reduce the menu, as fine dining requires dishes with greater complexity, preparation, and time. Therefore, we opted for more exclusive choices, with a sophisticated taste, to provide a unique gastronomic experience for all our guests,” he adds.
To preserve the gastronomic authenticity of tascas and promote shared dishes, the new menu at Tasca da Memória highlights some representative Portuguese ingredients and dishes. “I would say that cod and octopus dishes, as well as the iconic Portuguese tomato rice, are some of the ‘ex libris’ of the new Tasca da Memória menu, but not only that. My goal was mainly to reinvent classic foods and dishes, adding nuances of flavour and texture to further elevate their quality and refinement.”
The New Tasca da Memória Menu Combines Tradition with Reinvention and Innovation
For starters, Tasca da Memória features the Cod Salad with Hummus, an unexpected combination resulting in a surprisingly tasty starter. The Octopus Salad is a classic must-try, while the Shrimp à Bulhão Pato is ideal for sharing with friends and family. Tempura lovers can enjoy crispy vegetables served with wasabi mayonnaise and ponzu sauce. The Grouper Ceviche with Leche de Tigre is a refreshing starter, while the Caldo Verde offers a comforting and traditional choice.
In fish dishes, note the Confit Cod with Boiled Vegetables, a dish that exemplifies Vittorio’s philosophy by combining a symbol of Portuguese cuisine with seasonal ingredients such as celery, leafy greens, and beetroot – a blend of Portuguese and Italian flavours sure to delight even the most discerning palates.
The Octopus is presented with sophistication with smoked potato foam, crispy croutons, and confit cherry tomatoes. Another option highlights Breaded Octopus served with tomato rice, accompanied by tartar sauce. Other delicious choices include Red Mullet with shrimp xerém, samphire, and white asparagus, and Grouper with a citrus risotto and clams – a dish born from the combination of lemon’s citrus flavour and the freshness of the fish.
Meat dishes promise to satisfy lovers of intense flavours. Highlights include Crispy Pork Belly served with red cabbage, quince paste, and endives, offering an explosion of taste. Another option is “Risotto à La Mister Carlos”, made with black pork cheek and saffron risotto, for those who enjoy more elaborate dishes. Duck Magret is accompanied by carrot-ginger-miso purée, chard, and pomegranate gel. For more classic meat lovers, Veal Loin is served with confit potatoes, shallots, and Béarnaise sauce, while Turkey Breast stuffed with dates and toasted almonds, served with celeriac purée and bimi is a surprising choice.
The dessert Portamisú is one of the stars of the new dessert menu, a variation of classic Tiramisù including Maria biscuits, a typical Portuguese ingredient. Classic dessert lovers will enjoy Farófias with almond crunch, while chocolate dessert fans will delight in Chocolate Mousse with Red Fruits – Consistencies and Temperatures.
Pineapple Textures with Cream Ice Cream offer a refreshing and tropical experience, while Drunken Pear with Mascarpone Ice Cream, Red Wine Reduction, and Cinnamon Stick is perfect for those seeking more complex flavours. Three-Apple Tart with Hazelnut Ice Cream and Hazelnut Crumble is a classic yet sophisticated option. Finally, delicate Macarons are available in six-piece portions, along with the Pistachio “Surprise” dessert.
Tasca da Memória, with interior design by architect Joana Saraiva, is located at Travessa da Memória 62, in the historic area between Belém and Ajuda, Lisbon. The PBH Group establishment is open to the public from Monday to Sunday, 10:30 AM to 10:30 PM, with a terrace and bar service.
Chef Vittorio’s Multicultural Journey and Michelin Star
Chef Vittorio Colleoni was recently appointed Executive Chef of the PBH hotel group restaurants. At 38, he already holds a Michelin star, awarded for his work at the “San Martino” restaurant in Treviglio, Lombardy, northern Italy.
After growing up in the family restaurant “San Martino” – then run by his father, also a chef – Vittorio refined his culinary skills at renowned international kitchens, including the iconic three-Michelin-starred restaurants “Martín Berasategui” (Lasarte-Oria, Basque Country) and “El Celler de Can Roca” (Girona, Catalonia). His journey also included the United States, where he worked at “Alinea” (Chicago, three Michelin stars) and “Eleven Madison Park” (New York, three Michelin stars).
Returning to Italy, Vittorio took over and elevated the family restaurant “San Martino,” earning a Michelin star in 2013. He was recognised for his focus on fish dishes while maintaining classic favourites inherited from his father. His next project was opening “Marelet – Locanda e Osteria Contemporanea,” a versatile space also located in Treviglio.

Vittorio Colleoni is the new Executive Chef of the PBH hotel group and responsible for the new menu at Tasca da Memória restaurant, located in the Wine & Books Lisbon hotel. Vittorio combines fusion cuisine with Portuguese culture to elevate the gastronomic experience.
Lisbon, March 21, 2023 - Italian Vittorio Colleoni has been appointed Executive Chef of the restaurants of the PBH hotel group. At 38 years old, Colleoni already has a Michelin star on his resume, earned for his work at the "San Martino" restaurant in Treviglio, in the Lombardy region of northern Italy.
The collaboration with the PBH Group is already underway with the design of the new menu at the Tasca da Memória restaurant, located in the elegant and intimate Wine & Books Lisbon.
After growing up in the family restaurant "San Martino" - then in the hands of his father, also a chef -, Vittorio honed his culinary skills working at renowned kitchens in the gastronomic scene, with stints at the emblematic restaurants "Martín Berasategui" (three Michelin stars, located in Lasarte-Oria, in the Basque Country) and "El Celler de Can Roca" (three Michelin stars, in Girona, in Catalonia). Vittorio Colleoni's career also took him to the United States, where he worked at the "Alinea" restaurant (three Michelin stars, in Chicago) and at "Eleven Madison Park" (three stars, in New York).
Back in Italy, Vittorio took over and raised the level of the family restaurant "San Martino" and earned a Michelin star in 2013. He stood out for his focus on fish dishes but also for not neglecting classic favorite dishes inherited from his father. His next project involved opening "Marelet - Locanda e Osteria Contemporanea," his own space, more versatile, also located in the city of Treviglio.
Vittorio Colleoni now aims to reinvent the concept of a 'tavern' in a five-star hotel, further elevating the level of Tasca da Memória to a fine dining experience, surprising and offering all guests a unique gastronomic discovery.
"I literally grew up in a kitchen: my grandfather and my father were both cooks, and as a child, I played in the kitchen of our family restaurant. I can say that a passion for gastronomy was born within me, and I accepted without hesitation the challenge that the PBH Group presented me because I believe Portugal is a very fertile ground for my style of cuisine. I am someone who gives total primacy to the origin and freshness of ingredients, someone who believes that respect for each ingredient throughout the cooking process is essential to extract the best aromas and flavors," says Vittorio Colleoni.
"I want to distance myself from the definition of 'traditional Italian Chef.' I am above all a person who likes to innovate and adapt to the best local ingredients. At Tasca da Memória, we will prioritize products that mean a lot to the Portuguese, such as cod or octopus. But also vegetables that I prioritize in my kitchen, especially at this time of year. We will reinvent the concept of the 'tavern,' offering a fine dining experience in a cozy, relaxed environment, conducive to sharing," concludes Vittorio Colleoni.
